Being in charge of Restaurante Palco at Hotel Teatro in Oporto no doubt encourages a certain showiness and wit. As you can see from these beautifully crafted dishes, Executive chef Arnaldo Azevedo excels in this department. Bravo!

But equally the intensity and purity with which he distilled the flavours of his principal ingredient impressed me deeply. Despite the seemingly endless stream of dishes which came my way, I found myself reluctant to let my plate go before I’d greedily mopped up every trace of Azevedo’s wonderful reductions with bread.
